Tonite'z Dinner : Magic of packet soups

So in my last post I was speaking to you guys about easy-peasy food that could be made on days when you don't feel your pro-active selves. So I thought why not go lazy,like really crazy lazy and try to make an original meal combining the best of packet meals.

Now if you're lazy like me, then Soups is a must on your dinner/lunch/ heck even breakfast list.

To be honest I love soups. There's about a soup that somehow makes me feel loved. It doesn't matter whether the soup is something like a Chicken Soup with beaten egg and string noodles or a spicy, refreshing Gazpacho and some toasted bread with an avocado spread.

My husband often laments that I am such a Soup and Sandwiches person that if let to myself, I could survive decades on just that. tsshhkkk... ( But he loves the soups I make..ha ha)

So today I'm sharing a special soup recipe with you guys with hardly requires anything to make and it's an amalgamation of different packaged meals combined and cooked which tastes simply awesome.

Let's call it " Lazy Soup"

                  Ingredients.                 Time : 10 mins (including prep)     Serves : 4


  • Knorr Soup Packet - 1 (I have used Manchow Soup.You guys can go ahead with whatever flavour you prefer)
  • Minced Chicken (Frozen/Fresh) - 250 gms
  • Chopped Onion - 1 (Large)
  • Finely chopped garlic/garlic paste/garlic powder - 1/2 tsp.
  • Stock - 2 medium cups
  • Salt / Pepper - to taste
  • Refined Oil/ Butter- 1 tbl.spn.
  • Red Chilli Powder - 1/2 tsp.
  • Maggi noodles - 1 pac (Any flavor. I went with Masala)

Now if you want you guys can go ahead and add veggies frozen/fresh.It's up to you guys. As I said it's a lazy soup so I didn't add veggies.

                 Method

  • In a bowl mix together minced chicken, salt, pepper, chopped onion, garlic, red chilli powder and let it marinate for 1/2 hour or at least 20 mins.
  • In a container mix the Knorr powder with the chicken stock and keep it aside.( Instructions given behind every soup packet. But make sure there are no lumps )
  • Heat oil/butter in a kadai on a medium flame. Add the marinated chicken and stir fry till the onions are done.
  • Add the Maggi Noodles (dry) by crushing them into small pieces with your hand.
  • Add a bit of water and stir fry till the noodles and the minced chicken masala are incorporated.
  • Now add the required amount of warm water(The required amount of water needed is already mentioned behind every soup packet)
  • Add salt according to taste.
  • Keep on a medium flame and cook it till the Maggi and the chicken is done.
  • Sprinkle chopped spring onions/chilli flakes/a knob of butter/pepper.

Street style Chicken Egg Noodles

Street style Egg-Chicken Noodles with scrambled eggs  Extended weekend during quarantine got me feeling like an old bum. To beat the hassle of cooking something from scratch, threw in some leftover marinated boneless chicken chunks, onion chunks, roughly chopped garlic, and sauteed everything over high flame till done. Added 1 finely sliced green pepper, 1/2 cup button mushrooms sliced, all-dente noodles, 2 tbsp of tomato-chilli-sweet chilli sauce, 4 chopped green chillies (i like the heat), 1 tsp of soy sauce, fried some more and served with lime wedges n scrambled eggs on top.  Gone within 60 seconds' happened in front of me.
