Its an amazingly refreshing dish that's just perfect for the onset of summer. And pretty simple to cook too. The flavour profile plays effortlessly between tangy and spicy and compliments steamed rice, roomali roti or malabar paratha. The addition of the potato is optional though being a bong I would dare commit that blasphemy!

Revisiting a childhood classic: Shorshe-Mushroom'r Jhal

So this recipe belongs to my mom. Growing up as a kid with severe digestive issues, I could never really digest and burp proteins well. I still can't. So my mum had to, quiet often, rack her brain and find dishes that would appeal to my rather picky palate. This dish was a comfort food for me during the monsoons. Kolkata's rainy season is severe and as kids we were required to eat food that would fill our tummy but also help the body produce heat to keep the cold at bay. This dish is pure nostalgia. I've craved it throughout my travels, in countries that have never heard of it; I've been angry, sad, lonely over wanting-and-not getting it; over getting it but it wasn't the right one. Definitely a hit! So you know how instragram keeps on showing un-related videos in your feed. That's how I came across this dark beauty. Gennifer Goodwin has been a favourite of mine for years.
